So I have a slight obsession with bacon and breakfast for dinner. However, I have a husband who does not share an interest in breakfast for dinner. BUT, we had a date night and went and saw the movie ‘The Vow.’ It must have made him feel romantic, because when we got home from the movies, he said, ‘What about breakfast for dinner?!?’ SCORE! So of course I agreed. I had an idea that I wanted to try, bacon infused waffles. Oh yea. Breakfast for dinner. Woot, woot.

First off, bake your dang bacon people. If your not doing this, then your not eating bacon right. 450 for thirty minutes. It is sooooo worth it.
Next, I made my waffle mix according to direction. I crumbled my bacon and got my waffle iron HOT!
3/4 cup of batter and a major sprinkling of bacon and viola! Bacon infused waffles! You would think that you might need to put batter on top of your bacon, but you don’t. The batter engulfs the bacon. And if you bake it, it stays crispy, unlike pan fried bacon.

Lauren, I recently saw a recipe where you take your cooked bacon, lay it on a griddle and pour pancake batter length wise over it. It looked enticing, but this waffle looks more wonderful! I too love breakfast for dinner and think I just might try your creation soon. Thanks for sharing.
